- 3 Cups heavy cream
- 3 Cups whole milk
- 1 Cup white sugar
- 10 Ounces maraschino cherries, drained
- 10 Ounces jar maraschino cherries juice
- 8 Egg yolks
- 2 Teaspoons almond extract
- 12 Ounces bittersweet chocolate, chopped

- In a large saucepan, stir together the heavy cream, whole milk, white sugar, and juice from the jar of maraschino cherries. Heat over medium heat until it reaches a simmer, then remove from heat.
- Place the egg yolks in a large bowl. Gradually whisk in the hot cream mixture, about 2 tablespoons at a time, until you have incorporated 2 cups of the mixture.
- Whisk the hot yolk mixture back into the saucepan with the remaining hot cream. Cook on low heat, stirring constantly, until the mixture thickens enough to coat the back of a metal spoon and reaches 170 degrees F (75 degrees C).
- Pour the mixture into a container, cover, and refrigerate until cold, approximately 6 hours.
