Ingredients

  • 3 Cups heavy cream
  • 3 Cups whole milk
  • 1 Cup white sugar
  • 10 Ounces maraschino cherries, drained
  • 10 Ounces jar maraschino cherries juice
  • 8 Egg yolks
  • 2 Teaspoons almond extract
  • 12 Ounces bittersweet chocolate, chopped

Steps

  1. In a large saucepan, stir together the heavy cream, whole milk, white sugar, and juice from the jar of maraschino cherries. Heat over medium heat until it reaches a simmer, then remove from heat.
  2. Place the egg yolks in a large bowl. Gradually whisk in the hot cream mixture, about 2 tablespoons at a time, until you have incorporated 2 cups of the mixture.
  3. Whisk the hot yolk mixture back into the saucepan with the remaining hot cream. Cook on low heat, stirring constantly, until the mixture thickens enough to coat the back of a metal spoon and reaches 170 degrees F (75 degrees C).
  4. Pour the mixture into a container, cover, and refrigerate until cold, approximately 6 hours.
  5. Chop the drained maraschino cherries and stir them into the cold custard along with the almond extract and chopped bittersweet chocolate.
  6. Pour the mixture into an ice cream maker and freeze according to the manufacturer's directions.
