Ingredients

  • 2 Whole leeks, minced
  • 1 Whole onion, minced
  • 2 Tablespoons unsalted butter
  • 0.75 Cups potatoes, sliced
  • 2.33 Cups chicken stock
  • 1 Pinch salt, to taste
  • 1 Pinch ground black pepper, to taste
  • 1.125 Cups heavy whipping cream

Steps

  1. Heat the butter in a large saucepan over medium-low heat. Add the minced leeks and onion, and sauté until soft but not browned, about 8 minutes.
  2. Add the sliced potatoes and chicken stock to the saucepan. Season with salt and pepper to taste. Bring the mixture to a boil, then reduce the heat to low and simmer gently for 30 minutes.
  3. Puree the soup in a blender or food processor until very smooth. Set the soup aside to cool, then transfer it into a bowl or jug and refrigerate until chilled, at least 4 hours.
  4. Before serving, gently stir in the heavy whipping cream. Enjoy your creamy, chilled Vichyssoise!
