- 1 Medium onion, minced
- 12 Ounces (oz) jar roasted red peppers, drained
- 1 Cup whiskey
- 0.5 Cup garlic, minced
- 22 Pounds (lb) whole turkey
- 7 Ounces (oz) can chipotle chilies in adobo sauce, pureed
- 1 Roasting bag for a large turkey
Steps
- Preheat the oven to 325 degrees F (165 degrees C).
- In a bowl, combine the minced onion, roasted red peppers, whiskey, and minced garlic. Mix well and place the mixture inside the turkey cavity.
- Puree the chipotle peppers in a food processor until they reach the consistency of spaghetti sauce. Rub half of the chipotle mixture on the outside of the turkey and place the remaining half inside the cavity.
- Place the turkey into a roasting bag, seal the bag according to the instructions, and place it in a roasting pan.
- Bake the turkey in the preheated oven for about 3 1/2 hours, or until the juices run clear and an instant-read thermometer inserted into the thickest part of the thigh reads at least 165 degrees F (74 degrees C).
- Remove the turkey from the oven and let it rest in a warm area for 10 to 15 minutes before slicing.
