  • 1 Medium onion, minced
  • 12 Ounces (oz) jar roasted red peppers, drained
  • 1 Cup whiskey
  • 0.5 Cup garlic, minced
  • 22 Pounds (lb) whole turkey
  • 7 Ounces (oz) can chipotle chilies in adobo sauce, pureed
  • 1 Roasting bag for a large turkey

Steps

  1. Preheat the oven to 325 degrees F (165 degrees C).
  2. In a bowl, combine the minced onion, roasted red peppers, whiskey, and minced garlic. Mix well and place the mixture inside the turkey cavity.
  3. Puree the chipotle peppers in a food processor until they reach the consistency of spaghetti sauce. Rub half of the chipotle mixture on the outside of the turkey and place the remaining half inside the cavity.
  4. Place the turkey into a roasting bag, seal the bag according to the instructions, and place it in a roasting pan.
  5. Bake the turkey in the preheated oven for about 3 1/2 hours, or until the juices run clear and an instant-read thermometer inserted into the thickest part of the thigh reads at least 165 degrees F (74 degrees C).
  6. Remove the turkey from the oven and let it rest in a warm area for 10 to 15 minutes before slicing.
