- 4 Cups confectioners' sugar
- 0.5 Cups boiling water
- 1 Ounce (oz) bittersweet chocolate, melted
- 1 Teaspoon (tsp) light corn syrup
Steps
- Preheat the oven to 375°F (190°C). Prepare two baking sheets with nonstick spray or line them with parchment paper.
- In a large mixing bowl, combine the sugar and butter. Mix until fluffy using a machine or by hand. Add the eggs, milk, vanilla extract, and lemon extract, mixing until smooth.
- In a medium bowl, combine the cake flour, all-purpose flour, baking powder, and salt. Stir until mixed. Gradually add the dry mixture to the wet ingredients in batches, stirring well after each addition.
- Using a soup spoon, place heaping spoonfuls of the dough 2 inches apart on the prepared baking sheets. Bake for 18 to 20 minutes, or until the edges begin to brown. Allow the cookies to cool completely.
- In a large mixing bowl, place the confectioners' sugar. Gradually stir in enough boiling water to create a thick, spreadable mixture.
- Transfer half of the frosting to the top half of a double boiler. Add the chocolate and corn syrup, setting it over simmering water. Warm the mixture, stirring until the chocolate is melted and the frosting is smooth. Keep the chocolate frosting over hot water to maintain its spreadable consistency.
- Using a brush, coat half of the top of each cookie with chocolate frosting and the other half with white frosting. Allow the frosting to dry, then store the cookies in an airtight container.
