  • 3 Tablespoons (tbsp) freshly grated Parmesan cheese
  • 3 Tablespoons (tbsp) freshly grated Parmesan cheese, divided
  • 1 Tablespoon (tbsp) dried parsley
  • 1 Pinch black pepper, ground

Steps

  1. Cut the base off the fennel bulbs, then cut a cone shape into the bases to remove the cores. Slice the fennel bulbs vertically into 1/4-inch thick slices.
  2. Melt the butter in a heavy-bottomed stock pot over medium heat. Add the fennel and onion; cook for 2 minutes.
  3. Stir in the rice; cook for 2 minutes, stirring constantly, until the rice is lightly toasted.
  4. Stir in 1 cup of vegetable broth; continue stirring until the liquid is almost completely absorbed. Repeat this process with the remaining broth, stirring constantly. This should take about 15 to 20 minutes.
  5. Stir in the cream, 3 tablespoons of Parmesan cheese, and parsley; cook until the rice is tender yet firm to the bite and the risotto is thick and creamy.
  6. Season with freshly ground black pepper. Divide the risotto among bowls and sprinkle with the remaining 3 tablespoons of Parmesan cheese.
