Ingredients
- 4 Pounds (lb) russet potatoes, sliced
- Pinch salt, to taste
- Pinch ground black pepper, to taste
- 6 Tablespoons (tbsp) butter, melted
- 6 Tablespoons (tbsp) all-purpose flour
- 1.5 Cups whole milk
- 1 Cup heavy whipping cream
- 2.5 Cups mild Cheddar cheese, shredded
- 1 Cup Asiago cheese, shredded
- 1 Whole sweet onion, sliced
- 0.75 Cup green onions, sliced
- 0.33 Cup Parmesan cheese, shredded
- 7 Whole buttery round crackers, crushed
- 2 Tablespoons (tbsp) fresh parsley, chopped
Steps
- Place the sliced potatoes into a large pot and cover with water. Add salt and bring to a boil. Reduce heat to medium-low and simmer until just beginning to soften, about 15 to 20 minutes. Drain the potatoes.
- In a saucepan over medium heat, melt the butter. Add the flour and whisk until the mixture thickens, about 1 to 2 minutes. Gradually pour in the milk and heavy cream, stirring until smooth, about 2 to 3 minutes. Melt the Cheddar and Asiago cheese into the butter mixture, stirring continually until smooth and creamy, about 1 to 2 minutes. Season the sauce with salt and pepper.
- Preheat the oven to 400 degrees F (200 degrees C). Butter a 9x13-inch casserole dish.
- Layer about half of the sliced potatoes into the bottom of the baking dish. Top with sweet onion slices and green onions, then pour about 1/3 of the cheese sauce over the onions. Arrange the remaining potato slices into the dish and pour the remaining cheese sauce over the potatoes. Sprinkle Parmesan cheese and crushed crackers over the top.
- Bake in the preheated oven until hot in the center and beginning to brown at the edges, about 30 minutes. Sprinkle chopped parsley over the top before serving.
Enjoy this delicious and creamy side dish with your favorite main course!
