- 3 Tablespoons butter
- 3 Medium leeks, minced
- 2 Medium onions, minced
- 2 Whole garlic cloves, minced
- 2 Pounds mushrooms, minced

- 0.33 Cup sherry
- 9 Cups chicken stock
- 2 Tablespoons tomato paste

- 10 Leaves fresh spinach, torn
Steps
- In a large pot, sauté the butter, leeks, onions, and garlic until the vegetables are clear.
- Add the mushrooms (reserving 8 pieces), savory, oregano, sherry, chicken stock, tomato paste, and bay leaf to the pot. Simmer for about 30 minutes.
