  • 0.33 Cups brown sugar, packed
  • 1 Tablespoon (tbsp) butter
  • 3 Tablespoons (tbsp) cherry juice
  • 1.5 Cups walnuts, chopped
  • 30 Whole maraschino cherries, halved

Steps

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, sift together the flour, baking soda, salt, ginger, and instant coffee. Set aside.
  3. In a separate bowl, cream the butter and 1.25 cups of packed brown sugar until light and fluffy.
  4. Blend in the dark corn syrup, whisked egg, and cream.
  5. Gradually add the dry ingredients to the wet mixture, mixing well until a dough forms.
  6. Roll out one-third of the dough at a time on a floured surface to a thickness of 1/8 inch.
  7. Cut the dough into 2.5-inch rounds and place them on an ungreased cookie sheet.
  8. For the filling, combine 0.33 cups of packed brown sugar, 1 tablespoon of butter, and cherry juice. Stir in the chopped walnuts.
  9. Place 0.5 teaspoons of the filling in the center of each dough round.
  10. Shape each round into a bell by folding the sides over the filling, using a spatula to help. Make the top of the bell narrower than the bottom.
  11. Place half a maraschino cherry, cut side down, at the open end of each bell for the clapper.
  12. Bake in the preheated oven for 12-15 minutes, or until the cookies are lightly browned.
  13. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
