Ingredients

  • 1.5 Pounds (lb) chicken breast halves, cubed
  • 1 Bunch green onions, sliced
  • 1 Red bell pepper, minced
  • 1 Yellow bell pepper, minced
  • 4 Fresh jalapeno peppers, minced
  • 1 Clove garlic, minced
  • 0.5 Teaspoons (tsp) ginger, ground
  • 0.5 Teaspoons (tsp) salt
  • 0.5 Teaspoons (tsp) sage, dried
  • 0.5 Teaspoons (tsp) cumin, ground
  • 0.5 Teaspoons (tsp) white pepper, ground
  • 1 Tablespoon (tbsp) olive oil
  • 3 Tablespoons (tbsp) butter
  • 0.25 Cups all-purpose flour
  • 2 Cups chicken broth
  • 2 14 Ounces (oz) great Northern beans, packaged

Steps

  1. In a large skillet, heat olive oil over medium heat. Add the cubed chicken and sauté until cooked through. Remove the chicken from the pan and set aside.
  2. In the same skillet, sauté the green onions, red bell pepper, yellow bell pepper, jalapeno peppers, and garlic until softened.
  3. Return the cooked chicken to the skillet and add the ground ginger, salt, dried sage, ground cumin, and ground white pepper. Mix thoroughly to combine the flavors.
  4. In a separate small saucepan, melt the butter over medium heat. Stir in the flour to create a roux. Gradually whisk in the chicken broth until smooth.
  5. Pour the roux mixture into the skillet with the chicken and vegetables. Stir well to combine.
  6. Add the undrained great Northern beans to the skillet. Simmer the chili over low heat for 15 to 20 minutes, stirring occasionally, until heated through and flavors meld together.
