  • 1 - 8 Ounces (oz) package portobello mushrooms, divided
  • 1 - 10.75 Ounces (oz) can 98% fat-free condensed cream of mushroom soup
  • 0.25 - Cups fat-free half-and-half
  • 2 - 14.5 Ounces (oz) cans cut green beans, drained
  • 1 - Pinch ground black pepper, to taste
  • 1 - Pinch ground white pepper, to taste
  • 1 - 6 Ounces (oz) can crispy fried onions

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C). Spray an 8x11-inch casserole dish with nonstick cooking spray.
  2. Slice half of the portobello mushrooms and line the prepared pan with them. Chop the remaining half and set aside.
  3. In a medium bowl, combine the mushroom soup and half-and-half. Add the chopped mushrooms and green beans. Stir in the black pepper and white pepper. Add 0.5 cup of fried onions and stir until just mixed. Pour the mixture over the sliced mushrooms in the prepared casserole dish.
  4. Bake in the preheated oven for 35 minutes. Remove from the oven and top with the remaining fried onions. Return to the oven and bake for an additional 5 minutes.
  5. Remove from the oven and allow to cool slightly before serving.
