Ingredients

  • 2 Tablespoons (tbsp) butter, divided
  • 1 Tablespoon (tbsp) olive oil
  • 0.5 Cups onion, minced
  • 0.67 Cups Arborio rice
  • 0.25 Cups dry white wine
  • 3 Cups vegetable broth, boiling
  • 0.5 Cups hearts of palm, sliced
  • 0.25 Cups Parmesan cheese, grated
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste
  • 1 Tablespoon (tbsp) fresh parsley, minced

Steps

  1. Heat 1 tablespoon of butter and olive oil in a large, heavy-bottomed saucepan over medium-high heat. Cook and stir the onion in the hot butter-oil mixture until the onion begins to turn golden brown at the edges, about 2 minutes. Add the rice and stir until the rice is coated in oil and has started to toast, 2 to 3 minutes.
  2. Reduce the heat to medium and stir in the white wine. Cook until mostly evaporated, then stir in 1/3 of the boiling vegetable broth; continue stirring until incorporated. Repeat this process twice more, stirring constantly. Incorporating the broth should take 15 to 20 minutes total.
  3. When the rice is mostly tender but still has a very slight crunch, stir in the hearts of palm and Parmesan cheese until incorporated; season with salt and pepper. Cook for 1 more minute to heat through, then stir in parsley and the remaining 1 tablespoon of butter. Serve hot.
