Ingredients
- 5.25 Cups water
- 1.33 Cups wild rice
- 3 Pounds (lb) whole chicken, cut into pieces
- 2 Tablespoons (tbsp) vegetable oil
- 1 Cup celery, minced
- 1 Cup onion, minced
- 1 Cup fresh mushrooms, sliced
- 2 Tablespoons (tbsp) chicken bouillon granules
- 0.75 Teaspoon (tsp) white pepper, ground
- 1 Pinch salt, to taste
- 0.5 Cup margarine, melted
- 0.75 Cup all-purpose flour
- 4 Cups milk
- 0.75 Cup white wine
Steps
- Combine 5.25 cups of water and wild rice in a medium pot. Bring to a boil, cover, reduce heat to medium-low, and simmer until grains are parboiled and tender yet firm, about 30 minutes. Drain excess liquid and set aside.
- In a large stockpot, combine the remaining 7 cups of water and chicken. Bring to a boil, reduce heat to low, and simmer until the chicken is tender and no longer pink, about 40 minutes. Remove chicken from the pot and allow to cool. Strain the broth and set aside. Remove chicken meat from the bones and cut into bite-sized pieces; set aside.
- Heat vegetable oil in the same stockpot over medium heat. Sauté celery and onion for 5 minutes. Stir in mushrooms, cover, and cook until vegetables are tender, 5 to 10 minutes. Return the broth to the stockpot and add the parboiled rice. Stir in bouillon, white pepper, and salt; simmer uncovered for 15 minutes.
- Meanwhile, melt margarine in a medium saucepan over medium heat. Stir in flour until smooth. Whisk in milk and cook until the mixture is bubbly and thick. Whisk in about 2 cups of the simmering broth, then pour the broth-milk mixture into the stockpot.
- Add chicken meat and white wine to the soup; cook until heated through, about 15 minutes. Serve hot and enjoy!
