- 1 Pound beef stew meat, tenderized
- 1 Tablespoon all-purpose flour
- 8 Cloves garlic, minced
- 2 Whole bay leaves
- 1 Pinch ground black pepper, to taste

- 1 Medium onion, minced
- 1 Medium green bell pepper, minced
- 1 Medium carrot, minced
- 1 Pinch paprika, to taste
- 0.5 Whole fresh tomato, minced
- 1 Cup white wine
- 1 Cup water
- 2 Sprigs fresh parsley
- 3 Medium red potatoes, peeled
- 1 Medium sweet potato, peeled
- 1 14.5 Ounces can green beans, drained
Steps
- Heat the olive oil in a stockpot over medium-high heat. Dust the tenderized beef cubes with flour. Add the beef, minced garlic, bay leaves, and ground black pepper to the pot. Cook until the beef is browned, then season with a pinch of salt and continue cooking until the beef is tender, about 5 minutes.
- Add the minced onion, green bell pepper, carrot, and a pinch of paprika to the pot. Cook until the onion softens, about 5 minutes.
- Stir in the minced tomato, white wine, water, and fresh parsley. Cover the pot, reduce the heat to medium-low, and let it simmer for 30 minutes.
- Mix in the peeled red potatoes, sweet potato, and drained green beans. Continue to cook until the potatoes are easily pierced with a fork, about 45 minutes.
