- 1 Pound (lb) beef stew meat
- 4 Whole beets, peeled
- 28 Ounce (oz) can diced tomatoes
- 2 Whole potatoes, peeled
- 1 Cup baby carrots, sliced
- 1 Whole onion, minced
- 3 Cloves garlic, minced
- 2 Cups beef broth
- 6 Ounce (oz) can tomato paste
- 6 Tablespoons (tbsp) red wine vinegar
- 3 Tablespoons (tbsp) brown sugar
- 1.5 Teaspoons (tsp) dried dill weed
- 1 Tablespoon (tbsp) dried parsley
- 1 Whole bay leaf
- 1 Teaspoon (tsp) salt
- 0.5 Teaspoon (tsp) ground black pepper
- 3 Cups green cabbage, shredded
- 1 Cup sour cream, as garnish
Steps
- Place the beef, beets, tomatoes, potatoes, carrots, onion, and garlic in a slow cooker.
- In a separate bowl, whisk together the beef broth, tomato paste, red wine vinegar, brown sugar, dill weed, parsley, bay leaf, salt, and pepper. Pour this mixture over the beef and vegetables in the slow cooker, adding more broth to cover as needed.
- Cover and cook on Low for 8½ hours or on High for 4 hours.
- Set the heat to High, then stir in the shredded cabbage. Cover and continue cooking until the cabbage is tender, about 30 minutes.
- Remove the bay leaf before serving. Serve the borscht in bowls with a dollop of sour cream on top. Enjoy!
