Ingredients

  • 2 Tablespoons (tbsp) olive oil
  • 1 Whole onion, minced
  • 6 Tablespoons (tbsp) paprika
  • 2.5 Cups ketchup
  • 8 Cups water
  • 1 Ounce (oz) package dry onion soup mix, packaged
  • 1 Teaspoon (tsp) salt
  • 1 Tablespoon (tbsp) ground black pepper
  • 1 Pound (lb) linguica, tenderized
  • 1 Pound (lb) chourico, tenderized
  • 5 15 Ounces (oz) cans kidney beans, pureed
  • 3 Whole potatoes, peeled
  • 0.5 Pound (lb) spaghetti, divided

Steps

  1. In a large pot over medium heat, combine the olive oil and minced onion. Sauté for 5 minutes, or until the onion is tender.
  2. Add the paprika, ketchup, water, dry onion soup mix, salt, and black pepper to the pot. Stir well to combine.
  3. Cut the linguica and chourico into 3-inch pieces and add them to the soup mixture.
  4. In a food processor or blender, puree the kidney beans in small batches and add them to the pot.
  5. Reduce the heat to low and let the soup simmer for 2 to 3 hours.
  6. Add the peeled potatoes to the pot and continue to simmer for another hour.
  7. Break the spaghetti into 3 to 4-inch pieces, add them to the pot, and simmer for an additional 15 minutes, or until the spaghetti is tender.
  8. Serve hot and enjoy the hearty flavors of this comforting soup.
