Ingredients
- 1.5 Pounds (lb) top round, London Broil cut, tenderized
- 1 Tablespoon (tbsp) meat tenderizer
- 0.33 Cups vegetable oil
- 2 Teaspoons (tsp) lemon juice
- 2 Teaspoons (tsp) seasoning salt
- 0.25 Teaspoons (tsp) lemon pepper
- 2 Whole garlic cloves, minced
- 4 Teaspoons (tsp) fresh parsley, minced
- 2 Teaspoons (tsp) tarragon vinegar
Steps
- Score the top and bottom of the meat with a 1.5-inch square pattern, and score the side. Sprinkle the meat liberally with unseasoned meat tenderizer, then pierce with a fork 1/8 inch apart and at least halfway through the meat on both sides. Sprinkle lightly with water, and rub in the tenderizer. Place on a plate, cover, and set aside for an hour.
- In a small bowl, mix together the vegetable oil, lemon juice, seasoning salt, lemon pepper, minced garlic, fresh parsley, and tarragon vinegar. Pour the marinade over the meat, reserving a portion to be used for brushing. Pour the remaining marinade over the meat, cover the dish, and refrigerate for three hours, turning every half hour.
- Preheat the grill for hot heat.
- Lightly oil the grate, and position it 2 inches above the coals. Place the meat on the grill, and cook for 5 minutes. Turn the meat over, brush with the reserved marinade, and cook for another 5 minutes.
