- 0.5 Cups onion, minced
- 2 Pounds (lb) lamb, ground
- 1 Whole egg
- 1 Cup bread crumbs
- 1 Clove garlic, minced
- 4.5 Teaspoons (tsp) salt
- 1 Tablespoon (tbsp) black pepper, ground
- 4 Ounces (oz) goat cheese
- 1 Tablespoon (tbsp) extra-virgin olive oil
- 1 Tablespoon (tbsp) basil leaves, chopped
- 1 Tablespoon (tbsp) oregano, chopped
Steps
- Heat 1 teaspoon of olive oil in a small skillet over medium heat. Add the minced onion and cook, stirring until soft and translucent, about 5 minutes.
- In a large bowl, gently knead together the cooked onion, ground lamb, egg, bread crumbs, minced garlic, salt, and ground black pepper. Divide the mixture into six equal parts and roll each into a ball. Cover and refrigerate until ready to use.
- In a separate bowl, mix together the goat cheese, extra-virgin olive oil, chopped basil, and oregano until well combined. Cover and chill for 5 minutes.
- Preheat an outdoor grill to medium-high heat and lightly oil the grate.
- Take one portion of the meat mixture and make an indentation in the center with your thumb. Fill the indentation with a heaping tablespoon of the goat cheese mixture. Gently pull and form the meat around the cheese filling, shaping it into a burger patty. Repeat with the remaining portions.
- Grill the patties on the preheated grill until no longer pink in the center, about 8 minutes per side. An instant-read thermometer inserted into the center should read at least 130°F (54°C) for medium or 150°F (65°C) for well done.
