Ingredients

  • 3 Cups self-rising flour
  • 1 Tablespoon (tbsp) cinnamon, ground
  • 1 Teaspoon (tsp) salt
  • 0.5 Teaspoon (tsp) nutmeg, ground
  • 1.67 Cups white sugar
  • 0.5 Cup vegetable oil
  • 0.5 Cup butter, melted
  • 0.5 Cup honey
  • 3 Whole eggs
  • 2 Tablespoons (tbsp) vanilla extract
  • 3 Cups zucchini, grated
  • 1 Cup walnuts, chopped
  • 0.5 Cup coconut, shredded

Steps

  1. Preheat the oven to 350°F (175°C). Grease two 9x5-inch loaf pans.
  2. In a bowl, stir together the flour, cinnamon, nutmeg, and salt until well blended.
  3. In a large bowl, whisk together the sugar, oil, butter, honey, eggs, and vanilla extract.
  4. Stir in the zucchini, walnuts, and coconut into the wet mixture.
  5. Add the flour mixture to the wet ingredients and stir until well combined.
  6. Divide the batter evenly between the prepared loaf pans.
  7. Bake in the preheated oven for about 1 hour, or until a toothpick inserted in the center comes out clean.
  8. Allow the loaves to cool completely. For the best flavor, store the loaves overnight in plastic bags.
