  • 2 Egg yolks
  • 1 Teaspoon (tsp) vanilla extract

  • 0.75 Cups walnuts, minced
  • 0.33 Cups strawberry preserves

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets or line them with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolks, vanilla, and salt. Gradually mix in the flour.
  3. Shape the dough into 3/4-inch balls. Dip each ball in whisked egg whites, then roll in minced walnuts. Place the balls 1 inch apart on the prepared cookie sheets. Press down the centers of each with your thumb.
  4. Bake for 15 to 17 minutes, or until golden brown. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Just before serving, fill the centers of the cookies with strawberry preserves.
