  • 2 Pounds (lb) Brussels sprouts, peeled
  • 0.5 Cups butter, divided
  • 1 Teaspoon (tsp) kosher salt
  • 0.5 Teaspoon (tsp) black pepper, ground
  • 0.25 Cups lemon juice
  • 0.25 Cups pine nuts
  • 0.5 Cups blue cheese, crumbled

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Place the Brussels sprouts into a casserole or Dutch oven with a lid.
  3. Arrange pieces of butter on top of the sprouts.
  4. Season with kosher salt, ground black pepper, and lemon juice. Cover with the lid.
  5. Bake for 25 minutes in the preheated oven, stirring occasionally to prevent sticking.
  6. During the last 10 minutes of baking, sprinkle the pine nuts over the sprouts and remove the lid.
  7. Once the Brussels sprouts are tender, sprinkle crumbled blue cheese over them before serving, if desired.
