Ingredients

  • 0.33 Cups ghee, melted
  • 1 Bulb garlic, minced
  • 0.5 Teaspoons toasted cumin seed
  • 6 Ounces tomato paste
  • 3 Inch piece ginger, minced
  • 2 Teaspoons garam masala, divided
  • 1 Teaspoon salt
  • 1 Large onion, minced
  • 1 Cup water
  • 10 Ounces frozen chopped spinach, drained
  • 1 Pound paneer, divided
  • 0.25 Cup fresh cilantro, divided

Steps

  1. Melt the ghee in a saucepan over medium-low heat. Add the minced garlic and cumin seed, cooking until the garlic softens, about 3 minutes.
  2. Stir in the tomato paste, minced ginger, 1 teaspoon of garam masala, salt, minced onion, and water. Increase the heat to medium and stir until the tomato paste dissolves.
  3. Simmer the mixture slowly for 1 hour, adding water as needed to maintain a sauce-like consistency.
  4. Stir in the drained spinach, cooking until hot, about 5 minutes.
  5. Add the paneer cubes and cook for an additional 5 minutes, or until heated through.
  6. Transfer the dish to a serving bowl and sprinkle with fresh cilantro and the remaining 1 teaspoon of garam masala. Serve hot.
