Ingredients

  • 1 Pound (lb) medium shrimp, peeled
  • 1 Cup fresh lime juice
  • 10 Whole plum tomatoes, diced
  • 1 Large yellow onion, minced
  • 1 Whole jalapeño pepper, minced
  • 2 Whole avocados, diced
  • 2 Ribs celery, diced
  • 1 Pinch fresh cilantro, to taste
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste

Steps

  1. Place shrimp in a large glass or other non-reactive bowl and cover with lime juice to marinate until they turn pink and opaque, about 10 minutes.
  2. Meanwhile, in a separate large glass or non-reactive bowl, combine the diced plum tomatoes, onion, jalapeño, avocados, and celery.
  3. Remove shrimp from lime juice, reserving the juice. Dice the shrimp and add to the bowl of prepared vegetables.
  4. Add the reserved lime juice marinade, cilantro, salt, and pepper to taste. Toss gently to combine.
  5. Serve immediately with tortilla chips or on a tostada. Enjoy!
