Ingredients

  • 2 Tablespoons vegetable oil, divided
  • 1 Large onion, minced
  • 1 Teaspoon garlic, minced
  • 12 Ounces pork tenderloin, diced
  • 19 Ounces black beans, drained
  • 0.25 Cup water
  • 3 Chorizo sausages, sliced
  • 1.5 Cups chicken stock
  • 2 Bay leaves
  • 1 Pinch salt, to taste
  • 1 Pinch ground black pepper, to taste

Steps

  1. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the minced onion and minced garlic; cook until the onion softens and turns translucent, about 3 to 5 minutes. Transfer the onion mixture to a saucepan.
  2. Pour the remaining 1 tablespoon of vegetable oil into the skillet and place over medium-high heat. Add the diced pork tenderloin; cook until well browned.
  3. Meanwhile, add 3/4 of the black beans and 1/4 cup of water to a blender; pulse until pureed but not quite smooth.
  4. Transfer the bean purée to the saucepan; stir in the whole black beans, browned pork cubes, chorizo slices, chicken stock, and bay leaves.
  5. Bring the mixture to a boil over medium-high heat, then reduce the heat to medium-low. Cover and simmer for 30 minutes.
  6. Season with salt and ground black pepper to taste before serving.
