Ingredients

  • 2 Tablespoons (tbsp) dried parsley
  • 2 Tablespoons (tbsp) rosemary, ground
  • 2 Tablespoons (tbsp) sage, ground
  • 2 Tablespoons (tbsp) thyme leaves, dried
  • 1 Tablespoon (tbsp) lemon-pepper seasoning
  • 1 Tablespoon (tbsp) salt
  • 1 15 Pounds (lb) whole turkey, packaged
  • 1 Medium orange, sliced
  • 1 Medium onion, chopped
  • 1 Medium carrot, sliced
  • 2 Stalks celery, sliced
  • 750 Milliliters (ml) champagne
  • 1 14.5 Ounces (oz) chicken broth

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C). Line a roasting pan with aluminum foil long enough to wrap around the turkey.
  2. In a small bowl, mix together the parsley, rosemary, sage, thyme, lemon-pepper seasoning, and salt.
  3. Rub the herb mixture into the turkey cavity, then stuff with orange wedges, onion, carrot, and celery. Tie the turkey legs together with kitchen string and tuck the wings under the body.
  4. Place the turkey on the foil in the roasting pan. Pour champagne and chicken broth over the turkey, ensuring some liquid enters the cavity.
  5. Bring the aluminum foil up and over the turkey, sealing it without touching the turkey.
  6. Roast the turkey in the preheated oven for 2 ½ to 3 hours, until the juices run clear. Uncover the turkey and continue baking for an additional 30 to 60 minutes until the skin turns golden brown. The internal temperature should reach 180 degrees F (80 degrees C) in the thickest part of the thigh.
  7. Remove the turkey from the oven, cover with two sheets of aluminum foil, and let it rest in a warm area for 10 to 15 minutes before slicing.
  8. Serve and enjoy your juicy Thanksgiving turkey!

Recipe Tip: You can substitute white wine for champagne if desired.
