  • 4 3 Ounces (oz) skinless, boneless chicken breast halves
  • 1 Bunch green onions, minced
  • 1.5 Cups tomatoes, minced
  • 1 Teaspoon (tsp) garlic salt
  • 0.25 Cups water
  • 2 Teaspoons (tsp) garam masala, divided

  1. Heat the olive oil in a large skillet over medium-high heat. Place the chicken breasts in the hot oil and cook until browned on one side, about 3 minutes.
  2. Flip the chicken and add the minced green onions; cook for another 2 minutes.
  3. Add the minced tomatoes, garlic salt, and water to the chicken; stir well. Season with 1.5 teaspoons of garam masala.
  4. Bring the mixture to a boil. Reduce heat to medium-low, cover, and simmer for another 10 minutes, stirring occasionally.
  5. Stir the remaining 0.5 teaspoon of garam masala through the mixture. Raise the heat to medium and bring the mixture to a boil.
  6. Cook until the chicken is no longer pink in the center and the juices run clear, about 5 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
