Ingredients

  • 0.33 Cups (cup) ghee
  • 1 Bulb garlic, minced
  • 0.5 Teaspoons (tsp) cumin seed, toasted
  • 6 Ounces (oz) tomato paste
  • 3 Inches piece ginger, minced
  • 2 Teaspoons (tsp) garam masala, divided
  • 1 Teaspoon (tsp) salt
  • 1 Large onion, minced
  • 1 Cup (cup) water
  • 10 Ounces (oz) spinach, thawed and drained
  • 1 Pound (lb) paneer
  • 0.25 Cup (cup) cilantro, chopped

Steps

  1. Melt the ghee in a saucepan over medium-low heat. Stir in the minced garlic and toasted cumin seed; cook until the garlic softens, about 3 minutes.
  2. Add the tomato paste, minced ginger, 1 teaspoon of garam masala, salt, minced onion, and water. Increase the heat to medium and stir until the tomato paste dissolves. Simmer slowly for 1 hour, adding water as needed to maintain a sauce-like consistency.
  3. Stir in the thawed and drained spinach and cook until hot, about 5 minutes.
  4. Add the paneer cubes and allow to cook for an additional 5 minutes, or until hot.
  5. Pour the mixture into a serving dish and sprinkle with chopped cilantro and the remaining 1 teaspoon of garam masala.
