Ingredients

  • 4 Whole eggs, divided
  • 0.67 Cups white sugar
  • 1 Teaspoon vanilla extract
  • 0.125 Teaspoon salt
  • 0.75 Cups all-purpose flour, sifted

Steps

  1. Preheat your oven to 375°F (190°C). Line three jelly roll pans with parchment paper and prepare a pastry bag with a size 6 tip (1/2 inch).
  2. Separate the eggs. In a bowl, whisk the egg yolks with half of the sugar and the vanilla extract. Beat until the mixture is very light in color, about 5 minutes.
  3. In a clean bowl, beat the egg whites until they hold soft peaks. Gradually add the salt and the remaining sugar while beating until combined.
  4. Gently fold the beaten egg whites into the egg yolk mixture.
  5. Sift the flour over the egg mixture and gently fold it in.
  6. Fill the pastry bag with half of the batter and pipe 3 1/2 inch fingers, spaced 1 1/2 inches apart, in rows on the parchment paper. Repeat with the remaining batter.
  7. Bake in the preheated oven for about 15 minutes, until the cookies are firm to the touch and golden. Remove the paper and cookies from the baking sheet and place on racks to cool. Once cooled, remove the cookies from the paper and store them between layers of wax paper in an airtight container. These cookies freeze well.
