Ingredients

  • 6 Whole eggs, separated
  • 1.5 Cups white sugar
  • 3.5 Cups almonds, ground
  • 3 Teaspoons almond extract

Steps

  1. Preheat your oven to 325 degrees F (165 degrees C). Prepare a 9 x 9 x 2 inch baking pan by lining the bottom with waxed paper or parchment paper, and grease the paper.
  2. Beat the egg yolks until they are thick and have tripled in volume. Gradually add the sugar, beating until the mixture is very thick.
  3. Slowly fold in the ground almonds and almond extract into the yolk mixture.
  4. In a separate bowl, beat the egg whites until they are stiff but not dry. Gently fold the beaten egg whites into the yolk mixture.
  5. Pour the batter into the prepared baking pan.
  6. Bake for one hour or until done. Allow the bars to cool in the pan for 10 minutes, then turn them out and remove the paper. Let them cool completely before cutting as needed.
