Ingredients

  • 1.5 Cups unsalted butter
  • 0.75 Cups confectioners' sugar
  • 0.75 Teaspoons (tsp) salt
  • 1.5 Cups almonds, ground
  • 4.5 Teaspoons (tsp) vanilla extract
  • 3 Cups all-purpose flour, sifted
  • 0.33 Cups confectioners' sugar

Steps

  1. Preheat the oven to 325 degrees F (165 degrees C).
  2. In a large bowl, beat the butter, 0.75 cups confectioners' sugar, and salt with an electric mixer until smooth and creamy, about 2 to 3 minutes.
  3. Mix in the ground almonds and vanilla extract.
  4. Gradually blend in the sifted flour until well-combined.
  5. Shape the dough into balls (or crescents) using about 1 teaspoon for each cookie; place them 1 inch apart on ungreased cookie sheets.
  6. Bake in the preheated oven until just browned, about 15 to 20 minutes.
  7. Let the cookies sit until slightly cooled, about 15 minutes. Roll the warm cookies in the remaining confectioners' sugar.
