Ingredients

  • 1 Cup vegetable shortening
  • 3 Tablespoons (tbsp) vegetable shortening
  • 1 Cup sugar
  • 1 Large egg, whisked
  • 1 Teaspoon (tsp) almond extract
  • 2.5 Cups all-purpose flour, sifted
  • 0.5 Teaspoon (tsp) baking soda
  • 0.5 Teaspoon (tsp) salt
  • 1 Pinch red food coloring, to taste

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C). Prepare a small bowl with a few drops of red food coloring and set aside.
  2. In a mixing bowl, use an electric mixer to beat together the vegetable shortening and sugar until creamy. Add the whisked egg and almond extract, mixing well.
  3. In a separate bowl, sift together the all-purpose flour, baking soda, and salt. Gradually stir the flour mixture into the sugar-shortening mixture until well combined.
  4. Scoop a scant tablespoon of dough and form it into a walnut-sized ball. Place the ball onto an ungreased cookie sheet and press slightly with your thumb to create a flat spot on top.
  5. Dip the end of a bamboo chopstick into the red food coloring and touch the center of each cookie to make a red dot.
  6. Bake in the preheated oven for 15 to 18 minutes, or until the cookies are slightly browned.
  7. Allow the cookies to cool on a rack before serving.
