  • 2 ¼ Cups packed brown sugar
  • 1 ½ Cups margarine, softened
  • ¾ Cup white sugar
  • 3 Whole eggs
  • 2 Teaspoons almond extract

  • 3 Cups all-purpose flour
  • 3 Cups rolled oats
  • 1 ½ Teaspoons baking soda
  • ¾ Teaspoon salt
  • 1 ½ Cups sweetened flaked coconut
  • 4 Ounces (oz) white chocolate, minced
  • 3.5 Ounces (oz) macadamia nuts, coarsely chopped

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease two cookie sheets.
  2. In a mixing bowl, beat together the brown sugar, margarine, and white sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the almond and vanilla extracts.
  3. In a separate bowl, combine the flour, oats, baking soda, and salt. Gradually stir this dry mixture into the sugar mixture until well blended.
  4. Mix in the coconut, white chocolate, and macadamia nuts until evenly distributed throughout the dough.
  5. Drop tablespoonfuls of dough onto the prepared cookie sheets, spacing them about 1 inch apart.
  6. Bake in the preheated oven for about 15 minutes, or until the centers are set and the edges are golden brown.
