Ingredients

  • 1 Whole head romaine lettuce, torn
  • 0.75 Cups (cup) extra virgin olive oil
  • 3 Tablespoons (tbsp) red wine vinegar
  • 1 Teaspoon (tsp) Worcestershire sauce
  • 0.5 Teaspoon (tsp) salt
  • 0.25 Tablespoons (tbsp) mustard, ground
  • 1 Clove garlic, minced
  • 1 Whole egg
  • 1 Whole lemon, juiced
  • 1 Pinch black pepper, ground
  • 0.25 Cups (cup) Parmesan cheese, grated
  • 1.5 Cups (cup) garlic croutons
  • 1 2 Ounces (oz) can anchovy filets, mashed

Steps

  1. Clean the romaine lettuce thoroughly and wrap it in paper towels to absorb moisture. Refrigerate until crisp, at least 1 hour or more.
  2. In a bowl or jar, combine the olive oil, red wine vinegar, Worcestershire sauce, salt, ground mustard, minced garlic, and lemon juice. Whisk until well blended.
  3. Coddle the egg by heating 3 cups of water to boiling. Drop in the egg (still in shell) and let stand for 1 minute. Remove the egg from water and let cool. Once cooled, crack open and whisk the egg into the dressing until thoroughly blended.
  4. Mash the desired amount of anchovies and whisk them into the dressing. Set aside a few anchovies for garnish if desired.
  5. To assemble the salad, place torn lettuce leaves in a large bowl. Pour the dressing over the top and toss lightly. Add the grated Parmesan cheese, garlic croutons, and freshly ground black pepper, then toss again. Serve immediately!
