  • 2 Tablespoons (tbsp) olive oil
  • 0.5 Yellow onion, minced
  • 1.5 Cups chicken stock
  • 1 Cup apricot preserves
  • 0.25 Cup apple cider vinegar
  • 1 Teaspoon (tsp) hot pepper sauce
  • 1 Teaspoon (tsp) lime zest, zested
  • 1 Tablespoon (tbsp) butter

Steps

  1. Season the chicken pieces with garam masala, garlic powder, salt, and black pepper. Set aside to marinate briefly.
  2. Heat olive oil in a skillet over medium heat. Add the minced onion and sauté until tender, about 5 minutes.
  3. Add the seasoned chicken to the skillet and cook, stirring occasionally, until the chicken is browned on the outside, about 5 minutes. Remove the chicken and onion mixture from the pan and set aside.
  4. Pour 1 cup of chicken stock into the skillet and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  5. Stir in the apricot preserves and apple cider vinegar, thinning the sauce with additional chicken stock as needed to achieve a smooth consistency.
  6. Season the sauce with hot pepper sauce to taste. Return the chicken and onion mixture to the pan, ensuring the chicken is coated in the sauce.
  7. Simmer the chicken in the sauce until it is cooked through, about 10 minutes.
  8. Just before serving, stir in the lime zest and butter, allowing the butter to melt and enrich the sauce.
