  • 14.5 Ounces (oz) diced tomatoes, drained
  • 2 Tablespoons (tbsp) ketchup
  • 1 Cup flat-leaf parsley, minced
  • 6 6 Inch pita bread rounds
  • 0.33 Cup feta cheese, crumbled (Optional)
  • 1 Whole lime, divided
  • 1 Tablespoon (tbsp) fresh mint, minced

Steps

  1. Preheat your oven to 450 degrees F (230 degrees C). Season the ground lamb with salt and pepper, and set aside.

  4. Stir in the drained tomatoes, ketchup, and parsley. Simmer until most of the liquid evaporates, about 10 to 15 minutes, ensuring the mixture is spreadable but not too wet.
  5. Arrange the pita rounds on a large baking sheet. Spread the lamb mixture evenly over each pita, leaving a small border. Sprinkle with feta cheese if desired.
