Ingredients

  • 2 Tablespoons (tbsp) butter, melted
  • 2 Bone-in chicken breast halves
  • 1 Teaspoon (tsp) seasoning salt
  • 1 Clove garlic, minced
  • 2 Thick slices bacon
  • 0.5 Cups mushrooms, divided
  • 0.25 Cups heavy cream
  • 1 Teaspoon (tsp) fresh thyme leaves
  • 0.5 Teaspoon (tsp) black pepper, ground
  • 0.5 Teaspoon (tsp) lemon, zested

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a 9x13 inch baking dish, pour the melted butter. Place the chicken breasts skin side down in the dish. Sprinkle with seasoning salt, minced garlic, and half of the thyme.
  3. Turn the chicken over, season the other side, and lay the bacon strips on top. Scatter the halved mushrooms around the chicken.
  4. Bake in the preheated oven for 45 to 60 minutes, or until the chicken is cooked through and the juices run clear.
  5. While the chicken is baking, pre-brown the bacon in a skillet over medium heat until it starts to crisp. Remove and set aside.
  6. Once the chicken is done, remove the chicken, bacon, and mushrooms to a platter and keep warm.
  7. Pour the juices from the baking dish into the skillet used for the bacon. Add the heavy cream, remaining thyme, ground black pepper, and lemon zest. Whisk over low heat until the sauce thickens slightly.
  8. Pour the creamy sauce over the chicken and serve warm, garnished with additional thyme if desired.
