Ingredients

  • 5 Whole potatoes, peeled
  • 2 Tablespoons (tbsp) unsalted butter
  • 0.25 Cups milk
  • 0.5 Teaspoon (tsp) garlic powder
  • 0.5 Teaspoon (tsp) salt
  • 1 Tablespoon (tbsp) olive oil
  • 2 Small onions, minced
  • 1 Pound (lb) ground beef
  • 3 Cloves garlic, minced
  • 1 Teaspoon (tsp) spicy seasoned salt
  • 1 Tablespoon (tbsp) taco seasoning
  • 10 Ounces (oz) package frozen peas
  • 10 Ounces (oz) package frozen corn

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C). Lightly coat a 9-inch square baking dish with cooking spray.
  2. In a large pot, bring salted water to a boil. Add the peeled and quartered potatoes and cook until they are tender and easily pierced with a fork. Drain the potatoes and return them to the pot.
  3. Using a potato masher or sturdy whisk, mash the potatoes. Mix in the butter, milk, garlic powder, and salt. Adjust seasoning with additional salt and pepper to taste. Set aside.
  4. Heat olive oil in a large skillet over medium heat. Add the minced onions and cook until softened, about 8 to 10 minutes. Add the minced garlic and ground beef, cooking until the beef is browned and no longer pink. Season with spicy seasoned salt and taco seasoning.
  5. Stir in the frozen peas and corn, mixing until well combined and heated through.
  6. Pour the beef and vegetable mixture into the prepared baking dish. Spread the mashed potatoes evenly over the top, smoothing with a spatula.
  7. Place the dish in the preheated oven and bake for 30 to 35 minutes, or until the mashed potatoes are golden and the filling is hot and bubbly.
  8. Allow the pie to cool slightly before serving. Enjoy your Spicy Mexican Shepherd's Pie with a side of fresh salad or warm tortillas for a complete meal.
