Cooking Time: 50 minutes

Ingredients

  • 3 Pounds (lb) red potatoes, quartered
  • 1 Whole head cabbage, shredded
  • 2 Tablespoons (tbsp) butter, melted
  • 0.5 Cups butter, melted
  • 1 Teaspoon (tsp) garlic, minced
  • 4 Whole green onions, sliced
  • 1 Pinch white pepper, to taste
  • 1.25 Cups hot milk
  • 1 Pound (lb) corned beef, warmed

Steps

  1. Place the quartered red potatoes into a large saucepan and add water to cover by 1 inch. Bring to a boil over high heat, then reduce the heat to medium-low, cover, and simmer until tender, about 20 minutes.
  2. Meanwhile, bring a large pot of salted water to a boil. Stir in the shredded cabbage and 2 tablespoons of butter; cover and simmer until the cabbage has softened, about 10 to 12 minutes. Drain the cabbage.
  3. Melt 0.5 cups of butter in a skillet over medium heat. Stir in the minced garlic and the white parts of the green onions. Cook until the garlic has softened and mellowed, about 2 minutes.
  4. Drain the potatoes and mash them with white pepper. Fold in the melted butter mixture, hot milk, softened cabbage, and warmed corned beef.
  5. Sprinkle with the green parts of the green onions before serving. Enjoy your creamy buttered Colcannon with corned beef!
