  • 0.33 Cups (cup) red onion, minced
  • 0.33 Cups (cup) sweet red bell pepper, minced
  • 0.5 Cups (cup) canned whole kernel corn, drained
  • 1.5 Tablespoons (tbsp) fresh lime juice
  • 2 Tablespoons (tbsp) cilantro, torn
  • 1 Teaspoon (tsp) dried oregano
  • 1 Teaspoon (tsp) chipotle chile peppers in adobo sauce, minced
  • 1 Teaspoon (tsp) sea salt
  • 0.5 Cups (cup) half-and-half

Steps

  1. Bring a large pot of lightly salted water to a boil. Add linguine and cook until al dente, about 8 to 10 minutes. Drain and set aside.
