Ingredients

  • 2 Tablespoons (tbsp) olive oil
  • 3 Cloves garlic, minced
  • 4 Cups diced tomatoes
  • 1 Cup dry white wine
  • 2 Tablespoons (tbsp) butter
  • 1 Pinch salt, to taste
  • 1 Pinch black pepper, to taste
  • 16 Ounces (oz) linguine pasta, packaged
  • 1 Pound (lb) medium shrimp, peeled
  • 1 Teaspoon (tsp) Cajun seasoning, seasoned
  • 2 Tablespoons (tbsp) olive oil

Steps

  1. Heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add the minced garlic and cook for 2 minutes until fragrant.
  2. Stir in the diced tomatoes and white wine. Bring the mixture to a simmer and cook for 30 minutes, stirring frequently, until the tomatoes have reduced into a sauce.
  3. Stir in the butter and season the sauce with salt and black pepper to taste.
  4. Meanwhile, fill a large pot with lightly-salted water and bring to a rolling boil. Add the linguine and return to a boil. Cook the pasta uncovered, stirring occasionally, until al dente, about 11 minutes. Drain well in a colander.
  5. Season the shrimp with Cajun seasoning, salt, and black pepper.
  6. Heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the shrimp and cook until pink on the outside and no longer translucent in the center, about 5 minutes.
  7. Stir the cooked shrimp into the tomato sauce, then combine the sauce with the drained linguine. Serve immediately.
