Ingredients

  • 3 Slices bacon, cooked
  • 4 Whole red potatoes, peeled
  • 0.25 Cups butter
  • 0.5 Whole onion, minced
  • 3 Whole garlic cloves, minced
  • 0.5 Cups milk
  • 0.25 Cups all-purpose flour
  • 3 Cups milk
  • 1 Cup sour cream
  • 0.25 Cups Cheddar cheese, shredded
  • 0.25 Cups Parmesan cheese, grated
  • 2 Tablespoons salt, seasoned
  • 1 Tablespoon fresh parsley, minced
  • 1 Tablespoon red pepper flakes, ground
  • 0.5 Teaspoons celery salt
  • 0.5 Teaspoons basil, dried
  • 1 Tablespoon chives, minced

Steps

  1. Preheat a large slow cooker by setting it to High and covering with the lid.
  2. Place the cut-up potatoes in a microwave-safe bowl and microwave on High for about 8 minutes until cooked and steaming hot.
  3. While the potatoes are cooking, add butter to the preheated slow cooker. Cook and stir the onions and garlic for about 5 minutes until the onions turn golden.
  4. Stir in 0.5 cups of milk and whisk in the flour until smooth. Gradually whisk in the remaining 3 cups of milk and let the mixture simmer in the slow cooker for about 10 minutes until the soup begins to thicken.
  5. Stir in the hot cooked potatoes, crumbled bacon, sour cream, Cheddar cheese, Parmesan cheese, seasoned salt, parsley, red pepper flakes, celery salt, and dried basil. Mix well.
  6. Reduce the slow cooker setting to Low, cover, and cook for 3 hours, stirring occasionally.
  7. Sprinkle with chives before serving. Enjoy your savory, slow-cooked potato soup!
