Ingredients

  • 1 Pound (lb) ground beef
  • 1 Ounce (oz) packet taco seasoning mix, divided
  • 16 Ounces (oz) can refried beans
  • 0.67 Cups water
  • 12 Prepared crisp taco shells
  • 2 Whole avocados, mashed
  • 1 Tablespoon (tbsp) sour cream
  • 1 Whole fresh lime, juiced
  • 1 Pinch salt, to taste
  • 1 Pinch black pepper, to taste
  • 12 7 Inch flour tortillas
  • 2 Cups shredded Cheddar cheese, shredded
  • 1 Cup shredded lettuce, shredded
  • 1 Large tomato, minced
  • 0.25 Red onion, minced
  • 0.5 Cups sour cream

Steps

  1. Prepare the Beef: In a skillet over medium heat, add the ground beef and sprinkle with 3/4 of the taco seasoning packet. Cook, stirring and breaking up the meat, until browned and crumbly, about 10-15 minutes. Drain excess grease and set aside.
  2. Prepare the Beans: In a small saucepan, mash the refried beans with water and the remaining taco seasoning. Heat over low until simmering, stirring occasionally.
  3. Warm the Taco Shells: Preheat the oven to 300°F (150°C). Place the crisp taco shells on a baking sheet and warm in the oven for 3-5 minutes.
  4. Make the Guacamole: In a bowl, peel, seed, and mash the avocados. Mix in 1 tablespoon of sour cream, lime juice, and season with salt and pepper to taste. Set aside.
  5. Assemble the Tacos: Spread about 2 tablespoons of the heated refried beans on each flour tortilla. Wrap each tortilla around a crisp taco shell. Fill the shell with about 2 tablespoons of the cooked ground beef, then sprinkle with 2 tablespoons of shredded Cheddar cheese.
  6. Add the Toppings: Top each taco with shredded lettuce, chopped tomato, and onion. Add a dollop of sour cream and a generous spoonful of guacamole.
  7. Serve and Enjoy: Serve immediately while warm, and enjoy the delightful combination of textures and flavors in every bite.
