Ingredients
- 6 Cups (cups) water
- 3 Cups (cups) uncooked white rice
- 2 Large eggs, whisked
- 3 Tablespoons (tbsp) sesame oil, divided
- 1 Medium onion, minced
- 2 Stalks celery, minced
- 1 Pound (lb) cooked salad shrimp
- 3 Medium carrots, minced
- 1 Large red bell pepper, minced
- 0.75 Cups (cups) snow peas, sliced
- 1 Large green bell pepper, minced
- 1 Teaspoon (tsp) soy sauce
- 1 Pinch soy sauce, to taste
Steps
- In a medium saucepan, bring 6 cups of water to a boil. Add the 3 cups of uncooked white rice. Return to a boil, reduce heat to low, cover, and simmer for about 20 minutes, or until the rice is tender. Fluff with a fork and set aside.
- In a small skillet, heat 1 tablespoon of sesame oil over medium heat. Add the whisked eggs and scramble until just set. Remove from heat and set aside.
- In a large skillet or wok, heat the remaining 2 tablespoons of sesame oil over medium-high heat. Add the minced onion and celery, and sauté until the onion is translucent and the celery is tender, about 5 minutes.
- Add the cooked shrimp, minced carrots, red bell pepper, snow peas, and green bell pepper to the skillet. Stir-fry for 3-4 minutes until the vegetables are vibrant and slightly tender.
- Add the cooked rice to the skillet, stirring well to combine with the vegetables and shrimp.
- Drizzle 1 teaspoon of soy sauce over the rice mixture and add the scrambled eggs. Stir thoroughly to ensure everything is well combined and heated through.
- Taste and adjust seasoning with an additional pinch of soy sauce if desired. Serve hot, garnished with fresh scallions or sesame seeds if preferred.
