- 1 Whole egg
- 0.25 Cups (c) honey
- 0.875 Cups (c) brown sugar, packed
- 2 Teaspoons (tsp) ginger, ground
- 0.5 Cups (c) butter, melted
- 1 Teaspoon (tsp) baking soda
- 3 Cups (c) all-purpose flour, sifted
- 0.25 Cups (c) currants, dried
- 2 Tablespoons (tbsp) water, divided
- 1.5 Cups (c) confectioners' sugar, sifted
- 3 Drops red food coloring
Steps
- Preheat the oven to 375 degrees F (190 degrees C). Use a pastry brush to apply the melted butter to grease the baking sheets.
- In a saucepan, combine the butter, brown sugar, and honey. Stir over low heat until the mixture is melted.
- In a mixing bowl, add the sifted flour, ground ginger, and baking soda.
- Add the melted mixture from the saucepan and the egg to the dry ingredients.
- Mix everything together and knead into a ball. Chill the dough in a plastic bag for 30 minutes.
- Sprinkle flour on a flat surface and a rolling pin. Roll the dough out to about 1/4 inch thick. Use cookie cutters or a knife to cut out shapes. Place cookies on the baking sheet, press currants into the dough for eyes and buttons, and bake for 10 to 15 minutes until golden brown.
- For the icing, sift the confectioners' sugar into a bowl. Gradually add the divided water to make a thick paste. Divide the icing into small bowls, adding a few drops of food coloring to each. Fill pastry bags with the icing and decorate the cookies as desired.
