  • 1 Whole egg
  • 0.25 Cups (c) honey
  • 0.875 Cups (c) brown sugar, packed
  • 2 Teaspoons (tsp) ginger, ground
  • 0.5 Cups (c) butter, melted
  • 1 Teaspoon (tsp) baking soda
  • 3 Cups (c) all-purpose flour, sifted
  • 0.25 Cups (c) currants, dried
  • 2 Tablespoons (tbsp) water, divided
  • 1.5 Cups (c) confectioners' sugar, sifted
  • 3 Drops red food coloring

Steps

  1. Preheat the oven to 375 degrees F (190 degrees C). Use a pastry brush to apply the melted butter to grease the baking sheets.
  2. In a saucepan, combine the butter, brown sugar, and honey. Stir over low heat until the mixture is melted.
  3. In a mixing bowl, add the sifted flour, ground ginger, and baking soda.
  4. Add the melted mixture from the saucepan and the egg to the dry ingredients.
  5. Mix everything together and knead into a ball. Chill the dough in a plastic bag for 30 minutes.
  6. Sprinkle flour on a flat surface and a rolling pin. Roll the dough out to about 1/4 inch thick. Use cookie cutters or a knife to cut out shapes. Place cookies on the baking sheet, press currants into the dough for eyes and buttons, and bake for 10 to 15 minutes until golden brown.
  7. For the icing, sift the confectioners' sugar into a bowl. Gradually add the divided water to make a thick paste. Divide the icing into small bowls, adding a few drops of food coloring to each. Fill pastry bags with the icing and decorate the cookies as desired.
