- 2 Whole eggs
- 2 Tablespoons (tbsp) water
- 2 Tablespoons (tbsp) vegetable oil
- 0.5 Cups unsweetened cocoa powder
- 1 Cup shortening
- 5 Cups confectioners' sugar
- 1 Teaspoon (tsp) vanilla extract
- 1 0.25 Ounces (oz) package unflavored gelatin, packaged
- 0.25 Cups cold water
- 0.5 Cups powdered chocolate drink mix
Steps
- Mix together the cake mix, eggs, water, vegetable oil, and cocoa powder until you can shape it into a large ball. Let the mixture stand for 20 minutes.
- Shape the dough into 1/2 inch balls and place them 2 inches apart on greased cookie sheets. Flatten each cookie with the bottom of a glass greased once and dipped into the powdered chocolate drink mix.
- Bake the cookies at 400 degrees F (205 degrees C) for 8 minutes. Remove the cookies immediately and quickly flatten each with the back of a spatula. Let them cool for 20 minutes.
- To make the filling, soften the unflavored gelatin in 1/4 cup cold water and set it in a heatproof cup in a pan, simmering until clear. Cream together the shortening, confectioners' sugar, and vanilla extract. Add the cooled gelatin and beat for 10 minutes.
- Use 1 tablespoon of the filling for each cookie. Press the cookies gently together to spread the filling evenly.
