- 4 Cloves garlic, minced
- 1 Cup feta cheese, crumbled and divided
- 1 Whole (12 inch) pizza crust, pre-packaged
- 0.5 Cups sun-dried tomatoes, drained and shredded
- 1 Tablespoon oil from sun-dried tomatoes
- 0.25 Cups Kalamata olives, drained and minced
- 1 Teaspoon oregano, dried
- 2 Cups baby spinach leaves, torn
- 0.5 Small red onion, sliced
Steps
- Preheat your oven to 450°F (232°C) and adjust the oven rack to the lowest position.
- In a small bowl, mix together the mayonnaise, minced garlic, and 0.5 cup of crumbled feta cheese.
- Place the pre-packaged pizza crust on a cookie sheet. Spread the mayonnaise mixture evenly over the crust.
- Top the pizza with the shredded sun-dried tomatoes, minced Kalamata olives, and dried oregano.
- Bake the pizza in the oven for about 10 minutes, or until it is heated through and the crust is crisp.
- In a separate bowl, toss the torn baby spinach leaves and sliced red onion with 1 tablespoon of the oil from the sun-dried tomatoes.
