- 0.75 Cups butter
- 1.5 Cups brown sugar, packed
- 2 Tablespoons (tbsp) water
- 2 Cups semisweet chocolate chips
- 2 Whole eggs
- 2.5 Cups all-purpose flour
- 1.25 Teaspoons (tsp) baking soda
- 0.5 Teaspoon (tsp) salt
- 36 Chocolate mint wafer candies, divided
Steps
- In a large pan over low heat, cook the butter, packed brown sugar, and water until the butter is melted. Add the semisweet chocolate chips and stir until partially melted. Remove from heat and continue to stir until the chocolate is completely melted. Pour into a large bowl and let stand for 10 minutes to cool slightly.
- At high speed, beat in the whole eggs, one at a time, into the chocolate mixture. Reduce speed to low and add the dry ingredients, beating until blended. Chill the dough for about 1 hour.
- Preheat the oven to 350 degrees F (175 degrees C).
- Roll the dough into balls and place them on an ungreased cookie sheet about 2 inches apart. Bake for 8-10 minutes. While the cookies are baking, unwrap the chocolate mint wafer candies and divide each in half.
- When the cookies are brought out of the oven, put 1/2 divided mint on top of each cookie. Let the mint sit for up to 5 minutes until melted, then spread the mint on top of the cookie.
