  • 1 Cup confectioners' sugar
  • 0.5 Cups smooth peanut butter
  • 2.5 Tablespoons (tbsp) heavy whipping cream

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a large bowl, cream together 0.5 cups of butter, 0.5 cups of peanut butter, white sugar, brown sugar, and vanilla extract. Add the egg and beat well.
  3. In another bowl, combine the flour, baking soda, baking powder, and salt. Gradually add these dry ingredients to the creamed mixture, stirring until well combined. Stir in the oats.
  4. Drop the dough by teaspoons onto a greased baking sheet. Press each mound down with a fork to form 1/4 inch thick cookies.

  6. To make the filling, cream together 3 tablespoons of butter, confectioners' sugar, 0.5 cups of smooth peanut butter, and heavy whipping cream until smooth.
