  • 0.5 Cups yellow bell pepper, diced
  • 0.5 Cups cucumber, diced
  • 0.5 Cups frozen corn kernels, drained
  • 0.25 Cups red onion, minced
  • 1.5 Tablespoons (tbsp) fresh cilantro, minced
  • 1 Tablespoon (tbsp) fresh mint, minced
  • 3 Tablespoons (tbsp) balsamic vinegar
  • 2 Tablespoons (tbsp) olive oil

Steps

  1. Heat the canola oil in a saucepan over medium heat. Add the minced garlic and minced yellow onion. Cook and stir until the onion is softened and translucent, about 5 minutes.
  2. Add the water, 2 teaspoons of salt, and 0.25 teaspoon of black pepper to the saucepan. Bring to a boil.
  3. Stir in the quinoa, reduce the heat to medium-low, and cover. Simmer until the quinoa is tender, about 20 minutes. Drain any remaining water using a mesh strainer and transfer the quinoa to a large mixing bowl. Cover and refrigerate until cold, about 45 minutes.
