  • 0.25 Cup heavy cream
  • 1 Teaspoon black pepper, ground
  • 2 Tablespoons olive oil
  • 2 Large sweet onions, sliced
  • 2 Pears, peeled and minced
  • 0.5 Cup dried cherries
  • 2 Tablespoons black cherry balsamic vinegar
  • 0.5 Cup brown sugar
  • 0.25 Teaspoon kosher salt
  • 1 8 Ounces cream cheese
  • 2 Ounces Parmesan cheese, shredded
  • 4 Ounces blue cheese, crumbled
  • 0.5 Teaspoon black pepper, ground
  • 0.25 Cup candied pecans
  • 1 Firm green pear, sliced

Steps

  1. Beat 0.5 cup butter, 4 oz Parmesan cheese, minced thyme, 0.5 tsp kosher salt, and 0.5 tsp black pepper (ground) with an electric mixer until light and fluffy. Add 1.25 cups all-purpose flour and mix on low until mixture resembles large crumbles. Shape into a log, wrap in plastic, and refrigerate for 1 hour.
  2. Preheat oven to 350°F (175°C). Slice dough into 0.25-inch thick pieces and place on a baking sheet. Bake until golden brown, about 22 minutes. Cool on sheets for 10 minutes, then on a wire rack. Reduce oven heat to 300°F (150°C). Line a 10-inch springform pan with parchment paper and butter the paper and sides.
  3. Pulse toasted pecans, baked crackers, and 1 tbsp melted butter in a food processor until crumbled. Press crumbs into the bottom of the prepared pan. Chill while preparing the filling.
  4. Beat three 8-oz packages of cream cheese, 8 oz crumbled blue cheese, and 6 oz shredded Parmesan cheese until smooth. Add 4 large eggs one at a time, then beat in 0.25 cup heavy cream and 1 tsp black pepper (ground). Pour into prepared pan.
  5. Bake for about 1.5 hours. The cheesecake is ready when the edges puff and the center jiggles slightly. Run a knife around the edges, cool at room temperature for 1 hour, then refrigerate for 4 hours or overnight.
  6. Heat 2 tbsp olive oil in a skillet over medium heat. Cook 2 sliced sweet onions until translucent, about 5 minutes. Reduce heat and cook until dark brown, 15-20 minutes more. Add 2 minced pears, 0.5 cup dried cherries, 2 tbsp black cherry balsamic vinegar, 0.5 cup brown sugar, and 0.25 tsp kosher salt. Cook until pears are tender. Remove fruit with a slotted spoon, mash, and simmer juice until thickened. Transfer glaze to a bowl.
  7. Beat remaining 8-oz cream cheese, 4 oz crumbled blue cheese, 2 oz shredded Parmesan cheese, and 0.5 tsp black pepper (ground) until smooth. Spread over cooled cheesecake. Sprinkle with 0.25 cup candied pecans. Serve with cherry pear compote, sliced pear, and vinegar glaze on the side.
