  • 1 8 Ounce package angel hair pasta
  • 1 Teaspoon garlic, minced
  • 1 Pound large shrimp, peeled
  • 2 28 Ounce cans Italian-style diced tomatoes, drained
  • 0.5 Cups dry white wine
  • 0.25 Cups parsley, minced
  • 3 Tablespoons fresh basil, minced
  • 3 Tablespoons Parmesan cheese, grated

Steps

  1. Bring a large pot of water and 1 tablespoon of olive oil to a boil. Add the angel hair pasta and cook until al dente. Drain and rinse the pasta.
  2. In a 10-inch skillet, heat the remaining olive oil over medium heat. Add the minced garlic and cook, stirring constantly, until tender, about 1 minute.
  3. Add the peeled shrimp to the skillet and cook for 3 to 5 minutes until they turn pink. Remove the shrimp and set aside.
  4. Stir in the drained tomatoes, white wine, minced parsley, and minced basil into the skillet. Cook, stirring occasionally, until the liquid is reduced by half, about 8 to 12 minutes.
  5. Return the shrimp to the skillet and continue cooking until they are heated through, about 2 to 3 minutes.
